Kathleen Memmott's Sourdough Waffles



Kathleen Memmott's Sourdough Waffles and Pancakes

Prep the night before (or day of - just give yourself at least 8 hours for this process):
1 C Sourdough Starter
4 C All-purpose Flour
4 C Milk

Mix well, cover, let it sit overnight on the counter. This becomes your Fed Starter.

Prep the next day/later that day:
Remove 1 C of Fed Starter, place in an airtight container, and keep it in the fridge until next time you want to use it. (You would then go through that prep noted above, again.)

Ingredients for Waffles/Pancakes:
Remaining Fed Starter
2 tsp Salt
2 tsp Baking Soda
2 Tbsp Cooking Oil
3-4 Tbsp Sugar
4 Eggs

Combine well, place batter in preheated waffle iron and cook as desired. This will also make pancakes, instead of waffles. It's the same batter recipe. Have fun with it! ;)

This will make approx 10-12 waffles. It will also make quite a few pancakes, too! ;)
