I see all of these delicious looking recipes or great ideas on Facebook, but I don't WANT to SHARE them in order to be able to find them again - that never works for me! I just want to Pin It on Pinterest, plain and simple. But, I CAN'T Pin It; until NOW!

Creamy Super Chocolatey Homemade Hot Chocolate Mix






Ingredients:
11 cups powdered milk
1 cup confectioners' sugar
11 ounces powdered coffee creamer
2 lbs nestle' nesquick powdered chocolate milk mix
4 tablespoons cocoa powder
1 box instant chocolate pudding mix

Directions:

  • Whisk together all ingredients and store in an air tight container. You will need a HUGE bowl. I used my 10-liter Thatsa Mega Bowl from Tupperware that I ordered through my favorite Tupperware Consultant. Using an electronic kitchen scale helps, too. 
  • To mix: Use 1 part mix to 2 parts water. So, 2/3 cup water and 1/3 cup mix, or 1 cup water, 1/2 cup mix. You get the picture. 
I doubled the called for cocoa in ours because my family is crazy for rich chocolate and I serve mine with extra marshmallows to sweeten it because I'm not as crazy for rich chocolate as the rest of my family. I used French Vanilla flavored coffee creamer, but you could use plain or hazelnut, or whatever you like. If I were making it for me and not my family, I'd use the called for amount of cocoa and double the powdered sugar.

Easy & Healthy Instant Oatmeal Packets

Ingredients:
BASIC RECIPE FOR A SINGLE SERVING PACKET:
1/3 cup rolled oats (instant or quick); old fashioned oats may be used for microwave and refrigerator oatmeal
1 teaspoon chia seeds or ground flaxseed (optional)
2 teaspoons oat bran (or wheat germ/bran)
2 teaspoons powdered milk (omit for non-dairy, vegan)
1 to 3 teaspoons brown sugar, sucanat, pure maple sugar, coconut sugar, or other preferred sweetener
1/8 teaspoon cinnamon
pinch of salt

OPTIONAL ADD INS (see suggested flavor varieties in directions):
dried or freeze dried fruit, chopped
chopped nuts (pecans, walnuts, almonds, macademia nuts)
PB2 powdered peanut butter
cocoa powder
instant coffee or espresso powder
sweet spices (cinnamon, nutmeg, cardamon, cloves)
ground vanilla beans (dry powder)

Directions:
Combine basic recipe ingredients in individual zip top bags. Add additional flavor ingredients, if desired--see suggestions below.

To prepare 1 serving of hot oatmeal:
  • BOILING WATER METHOD (not recommended for old fashioned oats): Add 1 oatmeal packet to mug or bowl. Pour in 2/3 cups boiling water and stir. Let instant oats stand for 3-4 minutes to soften and thicken; stir, and they are ready to eat. Quick oats may need to soften an additional minute or two.
  • MICROWAVE METHOD: Add 1 oatmeal packet and 3/4 cup cold water to microwave safe mug or bowl. (The container needs to be large enough to allow for mixture to expand while it cooks. It can bubble up and double in size in the microwave.) For instant oats, cook uncovered on high for 1 minute; stir, and it's ready to eat. For quick oats, cook on high for 2 minutes, let stand 2 minutes, stir, and it's ready to heat. NOTE: Microwave power and cooking times can vary; adjust cooking time if necessary.
To prepare 1 serving of refrigerator oatmeal:
Add one oatmeal packet to a pint or half-pint jar (or other covered container). Pour in 1/2 cup cold water, add 1/4 cup plain, Greek yogurt, cover tightly, and shake vigorously until well mixed. Refrigerate at least 4 hours, overnight, or up to 3 days.

12 FLAVOR VARIATIONS (use the basic recipe ingredients, plus these additions):
  1. Plain -- Use basic recipe ingredients.
  2. Apple Cinnamon Maple -- 2 tablespoons dried or 1/4 cup freeze-dried chopped apples; additional 1/4 teaspoon cinnamon; use maple sugar for sweetener
  3. Blueberry -- 2 tablespoons dried or 1/4 cup freeze-dried blueberries.
  4. Cherry Almond -- 2 tablespoons dried or 1/4 tablespoons freeze-dried cherries; 1 tablespoon sliced or slivered almonds.
  5. Apricot Ginger -- 2 tablespoons chopped dried apricots; 1 teaspoon minced crystallized ginger.
  6. Cranberry Orange Pecan -- 2 tablespoons dried cranberries, 1 teaspoon dried orange peel bits, 1 tablespoon chopped pecans.
  7. Pineapple Coconut -- 2 tablespoons dried or 1/4 cup freeze-dried chopped dried pineapple, 1 tablespoon freeze-dried coconut
  8. Raspberry Vanilla Bean-- 2 tablespoons dried or 1/4 cup freeze-dried raspberries, 1/4 teaspoon ground vanilla powder
  9. Peach (or Mango) Macademia Nut -- 2 tablespoons chopped dried peaches (or mangos), 1 tablespoon chopped macadamia nuts
  10. Cocoa Banana -- 1/4 cup chopped freeze-dried bananas (dried banana chips not recommended), 2 teaspoons cocoa powder
  11. Peanut Butter Banana -- 1/4 cup chopped freeze-dried bananas (dried banana chips not recommended), 1 tablespoon PB2 peanut butter powder
  12. Mocha -- 1 teaspoon cocoa powder, 1/2 teaspoon instant espresso powder

Stacie's Texas Sheet Cake

Ingredients:
Cake:
2 C All-Purpose Flour
2 C White Sugar
1 tsp Baking Soda
1 tsp Ground Cinnamon
1/2 tsp Salt
2 Tbsp *Buttermilk Powder (found in the baking aisle of your grocery store)
1/2 C Butter (1 stick)
1/2 C Shortening
1/4 C Cocoa Powder
1 C Water
2 Eggs, beaten
1/2 C water

Frosting:
1/2 C Butter (1 stick)
6 Tbsp Milk
1/4 C Cocoa Powder
1 tsp Vanilla Extract
4 C Powdered Sugar, sifted.

Directions:
Cake:
  1. Preheat oven to 350F/175C. 
  2. Grease and flour 13 x 18" half-sheet cake pan. (You can also use a 10 x 15" jelly roll pan for this recipe.)
  3. In large bowl, sift together flour, sugar, baking soda, cinnamon, salt and buttermilk powder. Set aside.
  4. In a small saucepan, combine butter, shortening, cocoa powder and 1 C water. Bring to a boil and cook for 1 minute.
  5. Pour this liquid over the flour and sugar mixture in the bowl and mix well.
  6. In a small bowl, beat the eggs and add 1/2 C water. Blend this together well, and add to the cake batter. Mix well.
  7. Put batter into prepared pan. Bake for 30-35 minutes, or until a toothpick inserted in the middle comes out clean.
  8. As soon as you remove the cake from the oven, make the frosting. (Cake should be frosted no longer than 10 minutes out of the oven.)
Frosting:
  1. Add first 3 frosting ingredients into a small saucepan. Bring to a boil and cook for 1 minute. Remove from the stove and add vanilla extract.
  2. Place powdered sugar in a medium mixing bowl.
  3. Add in the chocolate mixture. Mix well.
  4. Frost while the cake is still warm.
*I have used Buttermilk Powder for years, and just LOVE it! I don't normally use Buttermilk, so, when I have a  recipe that calls for it, I determine how much Buttermilk Powder and water I would need, according to directions on the package, and add the powder in with my dry ingredients, and the water with my wet ingredients. It stores well in my fridge. :)

37-Calorie Brownies

Ingredients:
3/4 cup nonfat Greek yogurt (I used vanilla)
1/4 cup skim milk
1/2 cup Cocoa powder
1/2 cup Old fashioned rolled oats (like Quaker)
1/2 cup Truvia (or any natural/stevia based sweetener that pours like sugar)
1 egg
1/3 cup applesauce
1 teaspoon baking powder
1 pinch salt

Directions:
Preheat the oven to 400°F. Grease a square baking dish (I used 8"x8"). Combine all ingredients into a food processor or a blender, and blend until smooth (about 1 minute). Pour into the prepared dish and bake for about 15 minutes. Allow to cool completely before cutting into 9 large squares.

Zucchini Brownies




Brownies made with zucchini, bananas and applesauce, yielding a brownie with only 120 calories, 2 grams of fat, and a whole bunch of vitamins and minerals, and egg free. YESSSS!!!!

These are even a very moist low fat chocolate brownie alternative, for weight watchers, only 2 ww points per serving ( 24 servings). Its not going to be the same box brownie, but especially someone that only eats sweets occasionally like me, this healthier option is delish and guilt free!!

Ingredients
1/2 cup applesauce
2 small or medium bananas mashed
1 1/2 cup sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded zucchini
2 cups all purpose flour
1/2 cup walnut pieces

Directions:
Preheat oven to 350 degrees F. Grease and flour an 9x13 inch baking pan. In a large bowl, mix together the applesauce, mashed bananas and sugar. Add vanilla and cocoa and mix together. Then add baking soda, salt, and zucchini and mix together. Add flour and walnuts and mix together. Spread evenly into a prepared pan. Bake for 25 minutes until brownies spring back when gently touched.

Nancy Baker's Zucchini Brownies

 My Zucchini Brownies 


2 c. sugar
1/2 cup cocoa
1 c. vegetable oil
1/2 c. evaporated milk

1Tbsp. vanilla
3 eggs
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
2 1/2 c. flour
2 cups grated zucchini


Mix above ingredients in order listed. Pour into greased and floured 15x10x1 pan. Bake at 350 for 20-25 minutes.

Chocolate Glaze: bring to boil 1cube margarine, 3 Tbsp. evaporated milk, and 2 Tbsp. cocoa. Remove from hear and add 1/2 lb. powdered sugar. Beat until smooth. Spread thinly over hot brownies. Cool completely before serving.
Moist and delicious!!

Makes 30
3 ripe bananas
2 cups oats
1/4 c peanut butter
1/4 c cocoa powder
1/3 c unsweetened apple sauce
1 tsp vanilla
Preheat oven to 350F. Mash bananas then add the rest of the ingredients and stir and let sit for 20 min. Then drop by teaspoonful onto ungreased cookie sheet. Bake 10-12 min

Reeses Overload Cake

Peanut Butter Blondie Layers:
2 sticks butter
1 cup of SKIPPY peanut butter
6 eggs
2 tsp. vanilla
3 cups sugar
2 cups flour
2 teaspoons baking powder

Melt butter and Skippy peanut butter in microwave. Put in mixer and add sugar and mix well. Add eggs and vanilla and continue to blend. Then mix in flour and baking powder. Divide into 2 pans. Bake approx 35 mins. Cool completely. I like to freeze the cooled layers for easier frosting.

Chocolate Cheesecake:
1 stick softened butter
1/2 cup granulated sugar
2- 8 oz packages cream cheese, softened
1 1/2 oz. package cook and serve vanilla pudding
2 eggs
1 teaspoons baking powder
2 melted Hershey Bars
1/2 cup melted Ghirardelli bittersweet chips, melted

Preheat oven to 325 degrees. Grease ONE 9" pan with shortening, line the pan with parchment and then grease the parchment. Lightly butter the pan and Set aside.

Cream butter and sugar. Add cream cheese a little at a time until smooth. Scrape bowl down and beat again on medium speed, adding eggs one at a time. Add remaining ingredients. Mix again until smooth. Pour in pan. Smooth batter with offset spatula and bake for 50-55 mins. Cheesecake will puff up during baking, then it will deflate when taken out of the oven. Do not turn out cheesecake when finished baking. Put directly in the freezer, and leave until frozen solid. Remove for assembly.

Peanut Butter Frosting:
4 cups confectioner's sugar
1 cup SKIPPY peanut butter
2 tablespoons soft butter
1 teaspoon vanilla
few tablespoons of milk

Beat peanut butter, butter, vanilla and 2 cups of powdered sugar. SLOWLY add rest of sugar and then the milk until the desired consistency to spread on. Add milk slowly. Beat on high till fluffy!

Chocolate Frosting:
1/2 cup + 6 tablespoons cocoa powder
3/4 cup confectioners' sugar
1/2 cup heavy cream
1/2 cup unsalted butter, very soft
dash salt
1 cups confectioners' sugar
1 teaspoon vanilla

Heat cream in microwave and pour in mixer with cocoa powder and 3/4 cup confectioners. Mix well. Add butter, salt, 1 cup confectioners, vanilla and whip on high. Set aside.

Final Construction:
Split chocolate frosting between one peanut butter blondie top and the top of the chocolate cheesecake. Layer it: pb blondie/choc frosting, chocolate cheesecake/frosting/pb blondie. Frost entire cake in pb frosting. Push peanut butter chip and dark chocolate chips into the sides and top with 8 chopped peanut butter cups. keep chilled!!!

Wacky Cake



WACKY CAKE

3 cups all purpose flour
2 cups white sugar
3/4 cup vegetable oil
1 teaspoon salt
2 tablespoon distilled white vinegar
2 teaspoons baking soda
2 teaspoons vanilla extract
1/2 cup unsweetened cocoa powder
2 cups cold water

Sift flour, sugar, salt, soda and cocoa together into a 9 x 13 inch ungreased cake pan. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork.

Bake at 350 degrees for 30-40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.

    Double Chocolate Coca Cola Cake




    I can still remember my Mom pouring out a bottle of Coke to make this cake. It was our favorite. This cake is so moist and the icing is just irresistible. I hope you get a chance to make this one.

    Double Chocolate Coca Cola Cake

    1 cup Coca Cola (real thing, not diet)
    1/2 cup oil
    1 stick butter
    3 Tablespoon cocoa
    2 cups sugar
    2 cups flour
    1/2 teaspoon salt
    2 eggs
    1/2 cup buttermilk
    1 teaspoon baking soda
    1 teaspoon vanilla

    Frosting:

    1 stick butter
    3 Tablespoon cocoa
    6 Tablesppons of cream or milk
    1 teaspoon vanilla extract
    3 3/4 cups confectioner's sugar

    In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil. In another bowl, combine the sugar, flour and salt. Pour the boiling Cola mixture over the flour mixture and beat well. Add the eggs, buttermilk, soda and vanilla and beat well. Pour mixture into a greased and floured 13 x 9 inch baking pan and bake at 350 degrees or 20 to 25 minutes. Remove pan. Cool for about 10 minutes before frosting.

    Frosting: In a saucepan, combine the butter, cocoa, and milk. Heat until the butter melts. Beat in the remaining ingredients and spread on the cake while it's still warm. Enjoy!
     

    Stacie says: I'm not sure why this is called DOUBLE Chocolate. There is only one type of chocolate that I can see in the ingredients, and that is cocoa powder. So, don't let the title mislead you; there's only one kind. Unless you want to add chocolate chips or something... ;)

    Chocolate Oatmeal No-Bake Cookies

    Ingredients:
    1/2 C Butter
    2 C Sugar
    1/2 C Milk
    4 Tbsp Cocoa
    1/2 C Peanut Butter
    3 1/2 C Quick cooking Oats
    2 tsp. Vanilla

    Directions:
    1. Add the first 4 ingredients in a saucepan. Bring to a rolling boil, and boil for 1 minute.
    2. Stir in the next 3 ingredients and drop onto wax/foil paper. 
    3. Let cool until set.

    Homemade Brownie Mix




    Never buy boxed brownie mix again! Follow the recipe below and make brownies for approximately $.30 a mix!

    So simple, so easy. Not just frugal but cuts out the unknown ingredients. 

    1 Cup Sugar, 
    1/2 Cup All-Purpose Flour,
    1/3 Cup Cocoa,
    1/4 tsp Salt,
    1/4 tsp Baking Powder.

    At Baking Time Add: 
    2 Eggs, 
    1/2 Cup Vegetable Oil,
    1 teaspoon Vanilla.

    Bake @ 350 degrees for 20-25 minutes in an 8x8 or 9x9 pan. OR use the amazing Pampered Chef brownie pan and bake it in much less time - depends on your oven, check after 12-15 minutes of baking and remove when brownies are done!

    Put mix in plastic bags or mason jars.

    Lunchroom Lady Iced Brownies

    Ingredients:
    Brownies:
    1 c butter
    1/2 c cocoa
    2 c flour
    2 c sugar
    4 eggs
    4 tsp vanilla
    1 c chopped nuts.

    Icing:
    1/4 c softened butter
    1/4 c can milk (regular milk is fine)
    1/4 c cocoa
    3 c powdered sugar
    dash salt

    Directions:
    1. Preheat oven to 350F
    2. Mix Brownie ingredients
    3. Pour into a greased 9x13 pan,
    4. Bake 20-25 mins on 350. Check at 20 mins.
    5. Allow to cool, then mix the Icing ingredients together and frost as desired.
    This is a 50+-year old recipe.

    Dr Pepper Cake




    YES! YES! YES!

    DR. PEPPER CAKE
    1 c. butter
    1 c. Dr. Pepper
    4 tbsp. cocoa
    2 eggs
    1 tsp. vanilla
    2 c. sugar
    1/2 c. buttermilk
    1 tsp. soda
    2 c. flour
    1 1/2 tsp. cinnamon
    Heat butter, cocoa and Dr. Pepper. Mix well and set aside.
    Cream eggs, sugar and butter, milk and soda. Add flour and cinnamon alternately with Dr. Pepper mixture, then vanilla.

    Pour into greased and floured 9 x 12 inch pan and bake at 350 degrees for 25 to 30 minutes. Ice with Dr. Pepper Icing.

    DR. PEPPER ICING:
    1/4 c. butter
    1/4 c. Dr. Pepper
    3 tbsp. cocoa
    1 (16 oz.) box confectioner's sugar
    1 tsp. vanilla
    1 c. chopped nuts
    Heat butter, cocoa and Dr. Pepper and blend well. Stir in other ingredients. Mix thoroughly and ice cake.

    Peanut Butter Cup Brownies





    Peanut Butter Cup Brownies…

    Bring to boil:
    1 cup butter
    1 cup water
    2 Tbsp cocoa

    Remove from heat; let cool.

    Mix in bowl:
    2 cups sugar
    1 tsp soda
    2 cups flour
    ½ cup buttermilk
    ½ tsp salt
    1 tsp vanilla
    2 eggs

    Preheat oven to 350 degrees F. Spray or grease 40 mini-muffin cups. Spoon batter evenly into muffin cups, about 1 heaping teaspoon in each.

    Bake for 13 to 15 minutes or until top is set and toothpick inserted into center comes out slightly moist.

    After brownies are out of the oven, wait for centers to fall. This will happen upon cooling. If not then tap the centers with teaspoon, this will make a indent for peanut butter.

    3/4 cup creamy peanut butter
    1/2 cup peanut butter chips
    1/2 cup semi-sweet chocolate chips

    Over low heat, warm creamy peanut butter. While brownies are still warm spoon about half teaspoon warm peanut butter into the center of each brownie; top with chocolate chips and peanut butter chips. Cool completely in pan. Remove from pan and serve.

    Fudge Brownie Pie




    This recipe was voted the best Blogger recipe in 2012 and my friend Marie from the English Kitchen is generous enough to share it with you. I made this yesterday and it is insanely good.

    Fudge Brownie Pie

    3/4 cup flour
    1 cup of regular sugar
    1/4 cup unsweetened cocoa powder, sifted
    1 teaspoon baking powder
    1/4 tsp salt
    4 ounces butter, melted
    2 large free range eggs, beaten
    2 teaspoons vanilla
    1/2 cup chopped toasted pecans
    2 handfuls of mini marshmallows

    For the frosting:

    2 ounces butter, melted (1/4 cup)
    1 ounce cocoa powder, sifted (1/4 cup)
    2 ounces evaporated milk (1/4 cup)
    1 cup powdered sugar, sifted (8 ounces)

    Preheat the oven to 350 degrees. Butter a 9 inch spring form pan set aside.

    Whisk together the flour, sugar, cocoa powder, baking powder and salt in a bowl. Beat together the butter, eggs and vanilla. Add to the dry ingredients and mix until smooth. Stir in the toasted nuts. Pour into the prepared pan.

    Bake on a middle shelf of the oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Immediately sprinkle the marshmallows on top and return to the oven for a few minutes to melt the marshmallows. Remove from the oven and carefully spread the chocolate frosting over top.

    To make the chocolate frosting mix all ingredients together in a bowl, beating with an electric whisk until smooth and thick. Spread on the hot marshmallows. Let cool completely. Cut into wedges to serve.
