Susan Bartlett's Chicken Spaghetti

Ingredients:
3 large boneless skinless chicken breasts
1/2 cup water
1/2 onion chopped
1 package dry spaghetti sauce mix
2 small or 1 large can cream of chicken soup
1 stick of butter
8 oz pkg of cream cheese
Directions:
  1. Put first 4 ingredients in a slow cooker for and cook on low 5-6 hours.
  2. Then add cream of chicken soup and butter (margarine will work but it's not as good) Stir it in till the butter is melted.
  3. Shred the chicken. *You can let it continue to cook or go directly to the next step.
  4. An hour before serving, add cream cheese, stirring occasionally to incorporate the cheese.
  5. Serve over thin spaghetti or angel hair pasta.
I have served it over regular noodles and it's just not the same.  Sounds funny, I know but it's so much better with the thin spaghetti noodles.  My husband doesn't like angel hair so I stick with the thin spaghetti.
The sauce makes a lot so you can either boil a 16 oz package of noodles and add it to the sauce or just boil enough noodles for your dinner and freeze the rest of the sauce for another night.  Probably makes 12 good servings.

I fed the missionaries last night and they could not get enough of this.  The only reason they stopped was because I had to save some for my son that was coming home from a Scout trip.  They had 3rds, my boys had 2nds and it was gone.  It feeds a large family or a medium sized one with plenty of leftovers........unless you are feeding the missionaries.  LOL

*Stacie says: "I cooked my 3 frozen chicken breasts on high for 3 hours, took them out and shredded them in my Kitchenaid, and then put the chicken in the fridge until the rest of the sauce was ready. My chicken was tender and most, and not overcooked or dry, which is what normally happens when chicken is left in the slow cooker for a long time. Once I added the cooled chicken back to the sauce, it took less than 5 minutes to bring it back to a heated stage. :)
"Also, I am NOT a professional photographer. This pic does NOT do justice to the deliciousness that awaited us after I snapped the pic! ;)"

Slow Cooker Chicken and Noodles

I made the Crockpot Chicken and Noodles and it was delicious. My husband even said it was better than Bob Evans Chicken and Noodles. Now that's a compliment. The only thing I would do different is to make sure I'm using the proper size cans of chicken broth. Mine were a little smaller than what the recipe called for and it really needed a little more.

Crockpot Chicken and Noodles

Ingredients
4 boneless skinless chicken breasts (I used frozen)
2 cans cream of chicken soup
1 stick of butter
2 15 oz cans chicken broth
24 oz. frozen egg noodles

Directions
Cook chicken, soup, butter, and broth in crock-pot on low for 6-7 hours.
Take chicken out and shred.
Put chicken back in; add noodles and cook on low for 2 hours. Stir a few times while cooking.

Chicken Crescent Rolls

FB Source: Sheyrl Colclough

Ingredients:
2 boneless skinless chicken breast
2 cans of refrigerated crescent rolls
26 oz can cream of chicken soup
1 cup cheddar cheese

Directions:

  1. Boil chicken breast, then shred.
  2. Roll out each individual crescent. Place about a Tbsp of shredded chicken in center and roll it up.
  3. Bake on 350 for about 10-15 minutes until just starting to turn golden.
  4. Pour soup mixture over the top bake an additional 10 min.
  5. Top with cheddar cheese and bake for 10 more minutes.
Stacie says: "2 chicken breasts shredded make for VERY full crescent rolls. I use 23 oz (pre-cook weight) of chicken, cooked and shredded, and STILL have enough for another batch, so we'll be making this again this week. I also used half the soup, and mixed in equal amounts of milk with it. I saved the rest for the next batch I make this week."

Chicken and Biscuit Bake

Chicken and Biscuit Bake:

A cross between chicken and dumplings and a pot pie. In any case, it's fabulously good and comes together in a convenient casserole!

3 cups (approx.) of cooked, shredded chicken (I used 2 breasts for this)
1 1/2 cups chicken stock or broth
1/4 cup (half of a stick) butter, melted
2 cups Bisquick
1 1/2 cups milk
1 can cream of chicken soup
1 1/2 cups frozen mixed veggies (allow to thaw for about 30 minutes before adding to recipe)
3 chicken bouillon cubes
Pepper

Directions:

  1. Preheat oven to 350 degrees.
  2. Warm chicken stock in a small sauce pan and add in the bouillon cubes to dissolve. Keep warm until ready to use.
  3. Lightly coat with non-stick spray a 9 x 13 casserole dish or large, round casserole dish (mine was a 12" round). Pour in the melted butter.
  4. Layer the shredded chicken on top of the butter.
  5. Sprinkle on the veggies.
  6. In a small mixing bowl, combine the milk and Bisquick. (It's okay if there are a few lumps remaining.)
  7. Pour over the chicken and vegetables. DO NOT MIX!
  8. Sprinkle on a little black pepper, if desired.
  9. Combine the cream of chicken soup with the warmed stock in a small mixing bowl.
  10. Once blended, slowly pour over the Bisquick layer. Again, DO NOT MIX!
  11. (Yes, it'll looks like a big, soupy mess. Trust me ... this is what it's supposed to look like!)
  12. If using a 9 x 13 pan, bake for 40 - 45 minutes or until casserole is set and top is brown and bubbly. If using a large, round dish (mine was 12"), bake for 50 - 55 minutes or until casserole is set and top is brown and bubbly.
  13. Remove from oven and allow to rest for 5 minutes. Serve and enjoy!

1/2 tsp of salt or more to taste
