Guacamole Dip

FB Source: Carl Barbaro

Ingredients:
2 ripe avocados
1 teaspoon lime juice
1 green onion, diced
1 garlic clove, minced (optional)
½ small tomato, chopped
Pinch of salt (optional)

Directions:

  1. Peel avocados.
  2. Place them in a bowl and mash with a fork.
  3. Add lime juice, green onion, garlic, tomato, and salt stirring well.
(from Dr. Susan's Kitchen)
Serve with low-fat corn chips, sliced vegetables, and entrees such as burritos. Delicious!

Stacie says: "Save the avocado pit, and keep it in the bowl of guacamole. It helps to keep the dip from oxidating (going brown) as quickly."

Jalapeno Popper Dip

Foodie TV

JALAPENO POPPER DIP

Ingredients:

2 (8 ounce) packages of cream cheese, room temperature
1 cup mayo
1 cup shredded Mexican blend cheese (half Monterrey Jack, half Cheddar)
1/2 cup Parmesan cheese
1 (4 ounce) can chopped green chillies
1 (4 ounce) can diced jalapenos
1 cup panko bread crumbs
1/2 cup Parmesan cheese (yes another 1/2 cup)
1/2 stick of butter, melted

Directions:

Combine the first 6 ingredients in a mixer or food processor and blend until smooth. You do NOT need to drain the cans of chillies or jalapenos.

Spread the dip into a greased casserole dish. I used a large pie plate.

In a bowl, combine the panko breadcrumbs, Parmesan cheese and melted butter.

Sprinkle crumb mixture evenly over the dip and bake in a preheated 375 degree oven for about 20 minutes.

You want the top to get browned and the dip to be heated through and bubble gently on the edges.

You do NOT want to over-bake this dip. The mayo will begin to separate and leave you with a greasy mess.

Jalapeno Popper Dip

Ingredients:
6-8 slices of bacon, diced and cooked crispy
2 8-oz packages of cream cheese, soft
1 cup of mayonnaise
4-6 jalapenos, chopped and de-seeded. The seeds will make it fiery hot.
1 cup of cheddar cheese, shredded
1/2 cup of mozzarella cheese, shredded
1/4 cup diced green onion

Topping:
1 cup of crushed crackers ( I used Ritz)
1/2 cup parmesan cheese
1/2 stick of butter, melted

Directions:
  1. Preheat oven to 350.
  2. Combine all of the ingredients into a medium bowl. Stir well.
  3. Transfer to an oven proof dish. The size of the dish determines how thick the dip is. The thicker the dip the longer it may need to warm up. I used this stoneware dish that is round and measures 12 inches across. My dip is usually about an inch thick.
  4. Combine the topping ingredients and sprinkle all over the top of the dip.
  5. Bake the dip for 20-30 minutes or until bubbly.
