Barbi Cooper's Cinnamon Rolls

FB Source: Barbi Cooper

Ingredients:
Cinnamon Rolls:
3 1/2 cups warm water
1 cup oil
3/4 cup sugar
6 tbsp yeast
1 tbsp salt
3 eggs beaten
10 1/2 cups flour
1 cube butter
1 cup sugar
1 cup brown sugar
1/4 cup cinnamon
Walnuts (or Pecans)

Icing:
4 cups powdered sugar
1 tbsp vanilla
Evaporated milk-enough to make syrupy

Directions:
Cinnamon Rolls:
  1. In a *Bosch mixer, mix warm water, oil, sugar and yeast and rest for 15 minutes.
  2. Add salt, eggs, and 10 1/2 cups flour, until it pulls away from the bowl.
  3. Roll out onto floured surface to a 1/2" thick rectangle.
  4. Melt butter and brush it over the entire surface.
  5. Mix together sugar and brown sugar. To this I add about 1/4 cup cinnamon but you can add as much or little as you like.Sprinkle over buttered dough.
  6. Add walnuts or pecans, if desired.
  7. Roll long ways. Pinch edge. Cut to desired thickness. Place on greased cookie sheet 1" apart.
  8. Allow cinnamon rolls to rise until doubled, approx 30-45 minutes, depending on the warmth of the area.
  9. Bake in 400F oven for 12 min.
Icing:
  • Combine Icing ingredients and drizzle over hot rolls.
* Stacie says: "Using a Bosch mixer eliminates the need for that initial rising of your dough. If you use a different mixer, or mix by hand, be sure to allow the dough to rise until doubled before rolling out the dough. Continue following the rest of the recipe as noted."

Slimmed-down Broccoli and Cheddar Soup

FB Source:

Ingredients:
1 bunch broccoli
1 small onion, finely chopped
1 medium red-skinned potato, diced
1/4 cup all-purpose flour
3 cups vegetable broth
1/4 teaspoon freshly grated nutmeg
1 cup grated extra-sharp Cheddar
1 teaspoon Worcestershire sauce
One 12-ounce can fat-free evaporated milk
Kosher salt and freshly ground black pepper
2 scallions, thinly sliced

Directions:

  1. Separate the stems and the florets from the broccoli. Trim and discard the bottom of the broccoli stems and peel the tough outer layers. Finely chop the stems and coarsely chop the florets and set aside separately (in separate bowls).
  2. Mist a large pot with nonstick cooking spray and heat over medium heat. Add the broccoli stems, onions and potatoes and cook, stirring, until softened, 7 to 10 minutes.
  3. Add the flour and cook, stirring, until lightly toasted, about 2 minutes.
  4. Stir in the broth and bring to a boil. Reduce the heat to maintain a simmer and continue to cook, stirring occasionally, until thickened and the vegetables are tender, 12 to 15 minutes.
  5. Meanwhile, combine the reserved florets and 1/2 cup water in a small saucepan. Bring to a boil, cover and continue to steam until the florets are bright green and crisp-tender, about 5 minutes.
  6. Add the entire contents of the pot with the florets to the soup along with the nutmeg. Stir to combine and remove from the heat.
  7. Stir in the Cheddar, Worcestershire and milk. Season with salt and pepper. Garnish with the scallions.

Pumpkin Crunch Dessert

Carlene MeyersHillbilly Recipes.

Ingredients:
Pumpkin Base:
4 eggs
3 cups (not cans) of canned pumpkin-just plain pumpkin, not the spiced canned pumpkin
1 1/2 cups sugar
1 tsp salt
2 tsp cinnamon
1 tsp ground ginger
1/2 tsp gound cloves
3 1/3 cups evaporated milk

Other Ingredients:
1 box of white cake mix

1/2 cup chopped walnuts or pecans
Whipped topping to serve with

Directions:
  1. Mix Pumpkin Base ingredients in order given.
  2. Spray 9x13" pan with Pam and pour pumpkin mixture in.
  3. Sprinkle cake mix evenly over the top. Drizzle melted butter on top.
Note: It will spill easily, so be careful when you pick up the dish to put in the oven-I learned this the hard way.
  4. Bake at 350 degrees F. for 50 minutes. Sprinkle walnuts over the top, then bake 10 more minutes, 1 hour total.
Don't forget to serve with whipped topping!!!

Note: when I buy the ingredients for this recipe, 1 large can of pumpkin is enough, and I buy 2 large cans and 1 small can of the evaporated milk.

I don't have a pic of my own, but the pic here is what it looks like. Great at Thankgiving. I'm not a fan of pumpkin pie, but I love this. This is a recipe from my stepmother.

Billion Dollar Bar

Bottom Chocolate Layer:
1 cup milk chocolate chips (or half semi-sweet)
1/3 cup butterscotch chips
1/3 cup peanut butter
Melt milk chocolate chips, butterscotch chips and peanut butter in a pan over low heat; stirring constantly. Pour mixture into a 9 x 13″ baking pan lightly coated with nonstick spray or lined with plastic wrap which is long enough to drape over sides of the pan. Spread mixture and place in the refrigerator for 30 minutes.

Nougat Layer:
4 Tbsp butter
3/4 cup sugar
1/4 cup light brown sugar
1/4 cup evaporated milk
1-1/2 cups marshmallow creme
1/3 cup peanut butter
1-1/2 cups chopped salted peanuts (optional)
Melt butter over medium heat in pan; add sugars and evaporated milk; bring to a boil, and cook additional 5 minutes while stirring. Remove from the heat and add marshmallow creme and peanut butter. Pour over the bottom layer and gently spread mixture. If you use peanuts, scatter across the top. Place in the refrigerator for 15 - 30 minutes.

Caramel Layer:
14-ounce pkg caramel candy
1/4 cup cream
1 Tbsp butter
Place the unwrapped caramel candy, butter, and cream in a medium saucepan. Place over low heat and stir until the mixture has completely melted and is smooth. Pour in the pan and quickly spread over nougat layer. Place in the refrigerator for 15 - 30 minutes.

Top Chocolate Layer:
1 cup milk chocolate chips (or half semi-sweet)
1/3 cup butterscotch chips
1/3 cup creamy peanut butter
Melt milk chocolate chips, butterscotch chips, and peanut butter in a pan over low heat, stirring consistently. Pour over the caramel layer and spread. Place in the refrigerator for at least 1 hour before cutting into squares. Store in an air-tight container.

NOTE: I have substituted peanut butter chips for the butterscotch chip in one or both layers. Even though you can't see the peanuts, they are in this batch.

The gentleman who gave me this recipe told me he’d been making candy for over 45 years and this was the Billion Dollar Bar as far as he was concerned. He’d made divinity, all sorts of fudge, tempered chocolate, spun sugar, and pulled taffy, but this is his favorite.

Mamie’s Million Dollar Fudge

This recipe is over 50 years old. It belongs to Mamie Eisenhower, wife of President Dwight D. Eisenhower. Her recipe was published in many newspapers and magazines and is still being published today. This recipe is so famous that it is on file at the Dwight D. Eisenhower Presidential Library and Museum in Kansas.
I’ve been making it for about 8 years. It is good.

Mamie’s Million Dollar Fudge:
4 ½ cups sugar
Pinch of salt
2 TBSP. butter
1 can (12 oz.) evaporated milk
12 oz. semi sweet chocolate pieces
12 oz. German Sweet Chocolate (Kraft makes a German Sweet Chocolate Baking bar)
1 pint (7 oz) marshmallow cream or fluff (same thing)
2 cups nuts (I use either pecans or walnuts)
1 tsp. vanilla extract
Directions:

Heat the sugar, butter, salt, and evaporated milk over low heat, stirring until the sugar dissolves. Bring to a hard rolling boil and turn down the heat then simmer for 6 minutes. Put chocolate bits, German chocolate, marshmallow cream, and nuts in a bowl. Pour the boiling syrup over the ingredients. Beat until the chocolate is all melted, then pour in a pan. Let stand for a few hours before cutting. Store in a tin box in a cool place, will keep for up to 6 months…longer if frozen.

Peach Cake

Peach Cake

1 large can sliced peaches, drained and mashed (I used 2 regular cans since that is all I had at the time) You could also use fresh peaches.
2 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda

Drain the peaches and empty into a large bowl. I just used my hands to mash them. Add flour, sugar and soda and mix well. Spray a 9 x 13 inch cake pan and pour in batter. Bake in a preheated 350 degree oven for 35 minutes. See recipe below for icing.

Icing:
3/4 cup sugar
3/4 regular sized can of evaporated milk
1 stick butter or margarine
1 cup coconut (I used a little more than a cup of coconut)
1 cup nuts

Boil everything but the nuts on top of the stove until thickens, remove from heat, stir in nuts and spread on cooled cake. Enjoy!
