Easter Story Cookies - make the night before Easter

FB Source: Stacie Allred

Ingredients:
1 cup whole pecans
1 tsp white vinegar
3 egg whites
pinch salt
1 cup sugar
plastic ziploc bag
wooden spoon
tape
Holy Bible

Directions:
  1. Preheat oven to 300 degrees (this is important-don't wait 'til you're half done with the recipe!)
  2. Place pecans in ziploc bag and let children beat them with the wooden spoon to break into small pieces. Explain that after Jesus was arrested, He was beaten by the Roman soldiers.
    Read John 19:1-3.
  3. Let each child smell the vinegar. Put 1 tsp vinegar into mixing bowl. Explain that when Jesus was thirsty on the cross, He was given vinegar to drink. Read John 19:28-30.
  4. Add egg whites to vinegar. Eggs represent life. Explain that Jesus gave His life to give us life. Read John 10:10-11.
  5. Sprinkle a little salt into each child's hand. Let them taste it and brush the rest into the bowl. Explain that this represents the salty tears shed by Jesus' followers, and the bitterness of our own sin. Read Luke 23:27.
  6. So far, the ingredients are not very appetizing. Add 1 cup of sugar. Explain that the sweetest part of the story is that Jesus died because He loves us. He wants us to know and belong to Him. Read Psalms 34:8 and John 3:16.
  7. Beat with a mixer on high speed for 12 to 15 minutes until stiff peaks are formed. Explain that the color white represents the purity in God's eyes of those whose sins have been cleansed through repentance and the Atonement. Read Isaiah 1:18 and John 3:1-3.
  8. Fold in broken pecans. Drop by teaspoons onto wax paper covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus' body was laid. Read Matthew 27:57-60.
  9. Put the cookie sheet in the oven, close the door and turn the oven OFF. Give each child a piece of tape and seal the oven door. Explain that Jesus' tomb was sealed. Read Matthew 27:65-66.
  10. GO TO BED! Explain that they may feel sad to leave the cookies in the oven overnight. Jesus' followers were in despair when the tomb was sealed. Read John 16:20 and 22.
  11. On Easter morning, open the oven and give everyone a cookie. Notice the cracked surface and take a bite. The cookies are hollow! On the first Easter, Jesus' followers were amazed to find the tomb open and empty. Read Matthew 28:1-9.

Stacie Allred's Bread Recipe

Ingredients:
6 cups hot water (120 degrees)
3/4 cup melted Crisco
3/4 cup sugar
3 Tbsp instant yeast
1/4 -1/2 cups powdered milk
6 cups wheat flour, divided
6 Tbsp vital wheat gluten
1/4 cup soy lecithin
2 Tbsp salt
6 +/- cups white bread flour

Directions
  1. In a *Bosch mixer, mix water, Crisco, sugar, yeast and powdered milk together.
  2. Add at least 2 cups wheat flour, vital wheat gluten, and lecithin and mix until smooth before adding salt.
  3. Add remaining wheat flour and continue to add white bread flour until it pulls completely from sides of the bowl.
  4. Knead on high for 7-8 minutes.
  5. Form into loaves. Place in well-greased loaf pans. Let rise* till it reaches top of loaf pans.
  6. Bake at 350 for 25-30 minutes.
  7. Rub butter on top of hot bread.
Makes 5 large loaves.

*Stacie says: "This recipe calls for only one rising, which is after the loaves are formed. This is because of the special kneading action of the Bosch mixer. If you are not using a Bosch, and are using a Kitchenaid or other type mixer, you need to let the entire dough ball rise once in a greased bowl, covered, until doubled in size, before punching down and shaping into loaves for a second rising."

Salt (I used a flaky Maldon sea salt)
Citrus Zest (Tangerine, Lime, and Lemon)

  3. Present in a lovely glass container and store in a cool dry place.

FB Source: Homestead Survival

ORIGINAL Source: The Yummy Life

ORIGINAL Source with FULL INSTRUCTIONS: The Yummy Life - FULL Instructions

Ingredients:
BASIC RECIPE FOR A SINGLE SERVING PACKET:
1/3 cup rolled oats (instant or quick); old fashioned oats may be used for microwave and refrigerator oatmeal
1 teaspoon chia seeds or ground flaxseed (optional)
2 teaspoons oat bran (or wheat germ/bran)
2 teaspoons powdered milk (omit for non-dairy, vegan)
1 to 3 teaspoons brown sugar, sucanat, pure maple sugar, coconut sugar, or other preferred sweetener
1/8 teaspoon cinnamon
pinch of salt

OPTIONAL ADD INS (see suggested flavor varieties in directions):
dried or freeze dried fruit, chopped
chopped nuts (pecans, walnuts, almonds, macademia nuts)
PB2 powdered peanut butter
cocoa powder
instant coffee or espresso powder
sweet spices (cinnamon, nutmeg, cardamon, cloves)
ground vanilla beans (dry powder)

Directions:
Combine basic recipe ingredients in individual zip top bags. Add additional flavor ingredients, if desired--see suggestions below.

To prepare 1 serving of hot oatmeal:
  • BOILING WATER METHOD (not recommended for old fashioned oats): Add 1 oatmeal packet to mug or bowl. Pour in 2/3 cups boiling water and stir. Let instant oats stand for 3-4 minutes to soften and thicken; stir, and they are ready to eat. Quick oats may need to soften an additional minute or two.
  • MICROWAVE METHOD: Add 1 oatmeal packet and 3/4 cup cold water to microwave safe mug or bowl. (The container needs to be large enough to allow for mixture to expand while it cooks. It can bubble up and double in size in the microwave.) For instant oats, cook uncovered on high for 1 minute; stir, and it's ready to eat. For quick oats, cook on high for 2 minutes, let stand 2 minutes, stir, and it's ready to heat. NOTE: Microwave power and cooking times can vary; adjust cooking time if necessary.
To prepare 1 serving of refrigerator oatmeal:
Add one oatmeal packet to a pint or half-pint jar (or other covered container). Pour in 1/2 cup cold water, add 1/4 cup plain, Greek yogurt, cover tightly, and shake vigorously until well mixed. Refrigerate at least 4 hours, overnight, or up to 3 days.

Frosted Berry Hand Pies

By Hiedi
Makes 8 hand pies

Ingredients:
For dough:
2 cups all-purpose flour
1 cup (2 sticks) unsalted butter
½ teaspoon salt
1 tablespoon sugar
4-5 tablespoons water
1 egg, yolk and whites separated
3/4 cup berry jam

For sugar glaze:
1/2 cup powdered sugar
1 tablespoon milk
1/2 teaspoon vanilla

Directions:
  1. In food processor fitted with steel blade, pulse flour, butter, salt and sugar 10-12 times or until butter is consistency of small peas. Add water and pulse 5-7 more times or until dough starts to come together. Turn out onto floured surface and shape into 2 round discs. Cover in plastic wrap and refrigerate for 1 hour.
  2. Preheat oven to 450°F. Roll out dough to 1/4-inch thickness, and cut into 3 1/2-inch by 7-inch pieces. Each dough round should yield 4 pieces. Lightly brush edges of dough squares with egg and spoon 1 tablespoon jam on one side of dough within egg-basted edges. Fold dough in half and crimp edges with fingers and then press down edges of dough, about 1/4 inches, with the tines of fork.
  3. Place hand pies on baking sheet lined with parchment paper and brush tops with egg wash and bake for 15 minutes or until crust is golden. Remove from oven and allow cooling.
  4. While hand pies are resting, mix sugar glaze by adding powdered sugar, milk and vanilla to medium-sized bowl and whisk to mix well. If mixture is too thick, add more milk, 1/4 teaspoon at a time, to thin.
  5. When hand pies are cooled, drizzle the tips with sugar glaze and serve.
These Frosted Berry Hand Pies make for a perfectly dunkable after school treat for my soon to be pre-teen. She likes to help put her stamp on the process by folding and crimping the edges of her pies. The simple, buttery crust is the perfect package for the jammy insides.

Braided Nutella Bread

ORIGINAL Source: Goods Home Design

Ingredients:
2 1/2 C all purpose flour
1/2 tsp yeast
1 C water
1 tsp salt
1 Tbsp sugar
some Nutella
cornmeal
one egg

Directions:
  1. Start by dissolving yeast with a 1/4 cup water in a small bowl. Take another bowl, and while you let the yeast rest for 10 minutes, mix in – with the use of a stand mixer – the appropriate amount of flour, salt, and sugar.
  2. Add the yeast and mix at a low speed. Smoothly turn the speed to medium and keep turning for 7 minutes.
  3. Get another bowl and lightly oil it and place the dough you recently made in there. Cover it with a plastic wrap and in about an hour of sitting in a warm place it will double in size.
  4. Roll some of the dough in order to make a circle. Careful you leave enough because you’ll have to make another circle in a few minutes.
  5. Take the Nutella (be careful to take it out the fridge for a while so it would be easy to spread; you could also microwave it for 30 seconds to be sure) and pour an even layer on the surface, but leaving half an inch of margin of dough all around.
  6. The next step is to place another roll off dough (Nutella free) on top.
  7. Afterward, place it on a parchment-lined or silicon-lined baking sheet. It’s advised you sprinkle the sheet beforehand with cornmeal.
  8. Use a knife to cut the dough down the middle, but keeping one end intact. Look at the image for guideline.
  9. By turning the cut side toward the top, twist the ends of the dough overtop each other. Do this for every cut you made.
  10. For the next 20 minutes, let your future bread sit in a dry place, but make sure you cover it with plastic wrap. In the meantime, prepare the oven. Set it to 350°F.
  11. Before placing the dough in, brush it with some egg wash.
  12. Then, bake at this temperature for about 20 minutes.
  13. To get that lightly brown look and taste on top, raise to 425°F and bake for another 5-7 minutes.
It’s done! Let it cool before serving.

Pumpkin Chiffon Pie

Years ago, I made a wonderfully light pumpkin pie. It was so delicious and NOT heavy, like pumpkin pie normally CAN be.

I believe that it was this recipe, because I remember using the Knox gelatin.

Try this when you're celebrating Thanksgiving and Christmas this year. ;)
