I see all of these delicious looking recipes or great ideas on Facebook, but I don't WANT to SHARE them in order to be able to find them again - that never works for me! I just want to Pin It on Pinterest, plain and simple. But, I CAN'T Pin It; until NOW!

Chile Rellenos Casserole

Ingredients:
1/2 lb. ground beef
1/4 onion (chopped)
10 oz. can whole green chiles
1 1/2 cups cheddar cheese
2 eggs
3/4 cups milk
1/8 cup flour
1 tsp cumin
1/2 tsp salt
1/2 tsp pepper

Directions:

  1. Preheat oven to 375F.
  2. Cook ground beef and onion. Drain, then add cumin, salt, and pepper. 
  3. Line the bottom of your pan with whole green chiles (chop extra green chiles for later).
  4. Layer meat over green chiles. 
  5. Top with cheese and chopped green chiles. 
  6. Whisk together eggs and milk, then add flour and mix well. Pour this mixture over dish. 
  7. Bake for 35 to 40 minutes.
Serve right away while everything is hot and cheese is melted. Yum!

Chili Relleno Casserole

Ingredients:
2 (7 ounce) cans whole green chile peppers, drained
8 ounces Monterey Jack cheese, shredded
8 ounces Longhorn or Cheddar cheese, shredded
2 eggs, beaten
1 (5 ounce) can evaporated milk
2 tablespoons all-purpose flour
1/2 cup milk
1 (8 ounce) can tomato sauce

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  2. Lay half of the chilies evenly in bottom of baking dish. Sprinkle with half of the Jack and Cheddar cheeses, and cover with remaining chilies. In a bowl, mix together the eggs, milk, and flour, and pour over the top of the chilies.
  3. Bake in the preheated oven for 25 minutes. Remove from oven, pour tomato sauce evenly over the top, and continue baking another 15 minutes. Sprinkle with remaining Jack and Cheddar cheeses, and serve.
I added ground turkey. Cook the turkey like you would cook meat for taco's. I placed a layer of pepper then the turkey, the Monterey Jack cheese, Peppers, cheddar then egg mixture.

Chile Relleno Casserole




Ingredients:
2 cups cooked shredded chicken
1 diced onion
3 cans green chilies
1 cup cubed cheese
1/4 cup flour
1 1/2 cups milk
4 eggs
Pinch of salt
Pinch of pepper

Directions:
  1. Preheat oven to 350 degrees.
  2. Layer chicken, onion, green chiles and cheese in a 9 x 11 baking dish.
  3. Mix together flour, milk, eggs & salt and pepper. Pour over the chicken layer.
  4. Bake 35-40 minutes at 350 degrees.

Chicken Tortilla Slow Cooker Soup




Ingredients:
1 pound shredded, cooked chicken
15 oz can whole peeled tomatoes, mashed
10 oz can enchilada sauce
1 medium onion, chopped
4 oz can chopped green chile peppers
2 cloves garlic, minced
2 cups water
14.5 oz can chicken broth
1 tsp cumin
1 tsp chili powder
1 tsp salt
1/4 tsp black pepper
1 bay leaf
10 oz package frozen corn
1 Tbps chopped cilantro
7 corn tortillas
vegetable oil

Directions:

  1. Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. 
  2. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
  3. Preheat oven to 400 degrees F (200 degrees C).
  4. Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
  5. Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

Chicken Enchilada Dip




Ingredients:
1 pound boneless, skinless chicken breasts, grilled and shredded (I season my chicken with fajita seasoning or even Montreal Steak Seasoning prior to grilling.)
1 (8 ounce) package cream cheese, softened
1 cup mayonaise
1 (8 ounce) package shredded Mexican blend cheese
1 (4 ounce) can diced green chili peppers
1 jalapeno pepper, finely diced (use more if you like more heat)

Directions:

  1. In a medium bowl, combine shredded chicken, cream cheese, mayonnaise, shredded cheese, green chile peppers and jalapeno pepper. 
  2. Transfer the chicken mixture to a medium baking dish. 
  3. Bake uncovered at 350 degrees for 30 minutes, or until the edges are golden brown.
I made a DOUBLE batch for a shower last year. We stood around and ate the whole pan. This is perfect for Fall get togethers! 

Cheesy Baked Dip




Ingredients:
8 oz. sour cream
8 oz. cream cheese
16 oz. cheddar cheese, grated (sharp or mild)
4 oz. chopped green chilies
Green onion (suit your own taste)
1 c. chopped ham
1/2 pound chopped bacon
1 round bread loaf, hollowed out

Directions:

  1. Mix first seven ingredients together and put into the hollowed out bread loaf.
  2. Bake at 350 degrees uncovered for one hour. 
  3. Serve with leftover bread or chips.

(not exactly low cal...but ok for low carbers if they used pork rinds for dippers...and of course all the guys out there )

Chili Rellenos Casserole

Chili Rellenos Casserole

1 lb.ground beef
1/2 onion, chopped
2 cans whole green chilies
1 can green chiles, chopped
1 cup shredded cheese
4 eggs
1 1/2 cups milk
1/4 cup flour
red pepper

~ Directions: Preheat oven to 375. Brown meat and onion. Add salt and pepper and about 1 T. of red pepper. In a casserole dish, place whole green chiles on the bottom.

Top with cheese, then meat.
Add another layer of grated cheese and then the can of chopped green chilies. Mix 4 eggs and milk. Add flour, mix well and pour over dish.

Bake at 375 for about 50 minutes. Cover with foil halfway through cooking if it gets too brown

Tater Tot Taco Bake




Ingredients:
1 lb ground beef
1 small onion (diced)
1 garlic clove (minced)
1 small can black olives (sliced)
1 (1 ounce) package taco seasoning mix
1 (16 ounce) bag frozen corn
1 (4 ounce) can green chilies (diced and drained)
1 (12 ounce) can black beans (drained and rinsed)
1 (16 ounce) bag shredded Mexican cheese blend
1 (16 ounce) package frozen tater tots
1 (10.5 ounce fluid ounce) can enchilada sauce

Directions:

  1. Preheat the oven to 375 degrees. Spray a 9×13 inch baking dish with cooking spray. Heat a skillet to medium high heat. Add ground beef, garlic, and onion and cook while breaking the meat apart with a spoon or spatula until the ground beef is completely browned. Drain off any excess fat. Add taco seasoning mix, green chilies, frozen corn, and black beans to the ground beef. Cook until heated through.
  2. In a large bowl combine ground beef mixture, ¾ of the Mexican cheese blend, and all of the tater tots. Stir well to combine. Pour about 1/3 of the enchilada sauce into the bottom of the prepared baking dish. Add the tater tot mixture to the baking dish and lightly pat the mixture down into a solid, even layer. Pour the remaining enchilada sauce over the tater tots.
  3. Place into the oven and bake at 375 degrees for 40 minutes. During the last few minutes of baking, top the casserole with the remaining Mexican cheese blend and the sliced black olives. Return to the oven and bake until the cheese is melted and bubbly.

Wendy's Restaurant Chili

Ingredients:
2 pounds ground beef
one 29-ounce can tomato sauce
one 29-ounce can kidney beans (with liquid)
one 29-ounce can pinto beans (with liquid)
1 cup diced onion (1 medium onion)
1/2 cup diced green chili (2 chilies)
1/4 cup diced celery (1 stalk)
3 medium tomatoes, chopped
2 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water

Directions:

  1. Brown the ground beef in a skillet over medium heat; drain off the fat.
  2. Using a fork, crumble the cooked beef into pea-size pieces.
  3. In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat. Cook, stirring every 15 minutes, for 2 to 3 hours.

Chicken & Cheese Enchiladas with Green Chili & Sour Cream Sauce

10 soft taco shells (smaller flour tortillas)
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chilies


Preheat oven to 350 degrees. Grease a 9×13 pan. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. Stir in sour cream and chilies. Do not bring to boil, you don’t want curdled sour cream. Pour over enchiladas and top with remaining cheese, and if you like. diced green onions and black olives. Bake 22 min covered, remove foil and then high broil for 3 min to brown the cheese. Pico de Gallo is a nice garnish

White Chicken Enchiladas
Chicken enchiladas with green chili sour cream sauce
*These are seriously so so good*

10 soft taco shells

White Chicken Enchiladas




White chicken enchiladas
slightly adapted from mommas kitchen
8 flour tortillas
2 cups cooked, shredded chicken (I used half of a rotisserie chicken)
2 cups shredded Monterey Jack cheese
3 Tbsp butter
3 Tbsp flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chilies

Preheat oven to 350 degrees.

Spray a 9x13 pan with cooking spray. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan seam side down.

In a small sauce pan over medium heat, melt butter. Whisk in flour and cook 1 minute. Add broth and whisk until smooth. Allow sauce to thicken. Remove from heat and stir in sour cream and chilies.

Pour sauce over enchiladas and top with remaining cheese. Bake 20-25 minutes and then broil for a few minutes to brown the cheese.

Jalapeno Popper Dip

JALAPENO POPPER DIP

Ingredients:

2 (8 ounce) packages of cream cheese, room temperature
1 cup mayo
1 cup shredded Mexican blend cheese (half Monterrey Jack, half Cheddar)
1/2 cup Parmesan cheese
1 (4 ounce) can chopped green chillies
1 (4 ounce) can diced jalapenos
1 cup panko bread crumbs
1/2 cup Parmesan cheese (yes another 1/2 cup)
1/2 stick of butter, melted

Directions:

Combine the first 6 ingredients in a mixer or food processor and blend until smooth. You do NOT need to drain the cans of chillies or jalapenos.

Spread the dip into a greased casserole dish. I used a large pie plate.

In a bowl, combine the panko breadcrumbs, Parmesan cheese and melted butter.

Sprinkle crumb mixture evenly over the dip and bake in a preheated 375 degree oven for about 20 minutes.

You want the top to get browned and the dip to be heated through and bubble gently on the edges.

You do NOT want to over-bake this dip. The mayo will begin to separate and leave you with a greasy mess.

Cream Cheese Chicken Enchiladas





Ingredients:
5 oz. reduced fat cream cheese, softened
1/4 cup light sour cream
10 oz. can of enchilada sauce
1 cup shredded cheddar cheese, divided
1 cup shredded monterey jack cheese, divided
2 cups cooked shredded chicken
1 cup frozen corn kernels, thawed (canned corn works just fine, but drain it first)
4 oz. can diced green chiles
1/2 tsp chili powder
1/4 tsp cumin
Salt and pepper
4 scallions, thinly sliced
8 (8-inch) whole wheat tortillas

Directions:
  1. Preheat the oven to 325 degrees. Spray a 9×13 dish with cooking spray.
  2. In the bowl of your mixer cream together the cream cheese, sour cream, and 1/2 of the enchilada sauce. Stir in 1/2 cup of each type of cheese.
  3. In a second bowl toss together the chicken, corn, cumin, chili powder, salt and pepper, green chiles, and half of the scallions. Add the chicken mixture to the cheese mixture and combine well.
  4. Spread about half of the remaining enchilada sauce in the bottom of the baking dish.
  5. Spoon the filling into each tortilla, roll the tortilla up, and place in the baking dish with the seam down. Pour the remaining enchilada sauce over the top of the filled tortillas and sprinkle with the remaining cheese. Bake for 20-25 minutes or until hot and bubbly. Sprinkle with the remaining scallions and serve.
