I always guilt my kids into sharing their talents, telling them that their talents were given to them to bless others. I need to follow my own advice and quit hoarding my refried bean recipe. Warning these are not healthy but here you go Cassie,Kimberly, Bill, Staci, LeiLani, and anyone else I might have denied it to! lol!
This looks long and hard but you will find it very easy to prepare.
Pinto Beans
3 cups dried pinto beans (cleaned, sorted, & rinsed)
1/2 small onion thickly chopped
1/2 package of sliced bacon
2 heaping Tb chopped garlic
2 Tb salt
12 cups (4 qts) water
2 sliced raw jalapeños (optional)
Throw all ingredients into a large stockpot and cook covered overnight on low heat (or 4 hours on med-high).
Refried Beans
4 cups cooked pinto beans plus some of the broth (gauge the broth according to how thick or runny you want the beans.)
4 Tbs cooking oil (or bacon grease) the more, the better!
1/4 c chopped onion
1 tsp chopped garlic
Heat cooking oil in a frying pan on high heat until it almost starts to smoke (this is important!) Reduce heat to medium and immediately add onion and sauté until it turns light brown. Quickly add beans. Be careful, grease might splatter! Heat to a high boil. Reduce heat and simmer for 5-8 mins. Mash with a potato smasher.
Gecko Grill Bean Dip:
Add sliced canned jalapeño juice before mashing. I use La Costeña brand.
